This easy and adorable Easter Bunny Cake is the perfect last-minute dessert that looks impressive but is surprisingly simple to make. Trust me - if I can do it, you can too. Let's get into it!

This might seem weird, but I recommend making the fondant pieces first if you can. This allows them to dry and harden so they don't fall apart when you try to put them on the cake. I made my bunny ears, eyes, nose, and paws with fondant. Then I set them aside to dry for a day or two while I made the cake. If you don't have that much time, I recommend making your fondant pieces thinner/smaller.
You could also make the ears with some cardstock and draw the eyes on with icing if you're good at that. I'm not great at drawing so I prefer to sculpt them. I feel like it gives me more room for errors and revisions.
I used this white Satin Ice fondant for all of my decorations. I ordered it from Amazon, but you can also find similar fondant at Walmart or Michaels. Some people suggest using gum paste for these decorations because it doesn't crack, but I have worked with fondant before so I just stuck with the familiar this time. Spoiler alert: it totally cracked but it's not really noticeable in my opinion.
First, I created the bunny ears. I rolled out a good-sized chunk, leaving it fairly thick. Then I free-handed the outline. It took a couple of tries but I was too lazy to create a template.
Then I took a smaller chunk of fondant and added one drop of pink gel food coloring. A little goes a very, VERY long way with this food coloring. If you add too much, you can mix in more white fondant. Then I twisted and kneaded the fondant to mix in the food coloring. This will stain your hands so I recommend wearing gloves if that bothers you, or you can just buy pink fondant. I rolled mine out and then cut two more, slightly smaller ear shapes for the inside of the bunny ears.
Next, you'll grab your bamboo skewers or popsicle sticks and assemble your ears. Make sure to leave about half of the skewer hanging out so that you can insert it into the cake later. You can leave the ears flat as shown, or let them dry in a cup/laid on a curved surface such as a rolling pin.
